What can we say? We were feeling a bit indulgent this week – and put together this incredible Flourless Chocolate Cake with a fun (and easy!) Chixi Butter Ganache. Give it a whirl – but take it from us, this cake will disappear fast!
Flourless Chocolate Cake with Chixi Butter Ganache…
- Coconut Oil Baking Spray
- 9-inch springform pan
- Parchment or wax paper, cut into a circle the size of the springform pan
- 12 tbsp (1 1/2 sticks) of butter
- 10 ounces of bittersweet or semi-sweet chocolate, broken into smaller pieces or chopped
- 1/2 cup unsweetened cocoa powder
- 1 1/2 tsp vanilla extract
- 5 extra large eggs (room temperature!)
- 1 cup of sugar
- a pinch of salt
- 1 jar of Vanilla Bean Chixi Butter
Start by preheating your oven to 350 degrees. Next, stencil and cut out a circle of parchment or wax paper the size of the springform pan you are using. Place in the bottom of the pan and spray the entire inside (bottom and sides) with Coconut Oil. Then, in a large mixing bowl, combine the butter and chocolate. Melt together until just combined in the bowl set over a pan of simmering water. Once combined, remove from above the pan and add in cocoa powder and vanilla extract. Set aside and let cool for approximately 5 minutes.
While the chocolate cools, add the eggs and sugar to a standing mixer or, using a hand mixer, mix on medium-high speed for roughly 3-4 minutes until the mixture is light and fluffy. Next, gradually (in small amounts) add the cooled chocolate mixture to the egg mixture, folding in gently. You’ll notice it takes a few additions of the chocolate to begin to thoroughly mix in – be patient! Once all the chocolate has been added, fold only until JUST combined!
Finally, pour the mixture into your springform pan and add to your 350 degree oven. Bake for approximately 35-40 minutes, until just set. Remove from the oven and let the cake stay in the pan for roughly 15-20 minutes. Remove the sides and let cool for another 30 minutes.
Now, here is where the magic happens. Remove the entire jar of Vanilla Bean Chixi Butter into a microwave safe bowl. Microwave on high heat for approximately 20-30 seconds until it’s the perfect consistency to pour on the cake. Stir occasionally with a spoon to ensure all of the Chixi Butter is melted down. Then, using a spoon, gently drizzle over the cake and serve immediately.
