Avocado is a fantastic and health-forward ingredient to add to any dish, and it helps to craft an impeccable dessert! This cake went FAST in our house…and we can’t wait for you to try it out.
Chocolate Avocado Cake with Within Without Granola
- Small round cake pan (6-8″)
- Baking spray or butter (to grease pan)
- One large avocado, whole
- One large egg, room temperature
- 1/4 cup coconut milk (unsweetened)
- 1/2 cup honey
- 1/2 cup Vanilla Bean Chixi Butter
- 3 tbsp cocoa powder
- 1 tbsp baking powder
- 1 tsp salt
- Within Without Chewy Granola – Original (as much as desired)
Start by preheating your over to 350 degrees. In a blender, puree the avocado, egg, coconut milk, and honey until smooth. Set aside.
In a large mixing bowl, combine the Chixi Butter, cocoa powder, baking powder, and salt until just incorporated. We used a spatula to complete this portion.
Carefully and slowly, add the avocado blend to the Chixi blend, gently folding in until combined. Once incorporated, add your desired amount of Within Without Chewy Granola (we added roughly 1/2 cup) and be sure to save some for garnish later. Continue mixing until the granola is incorporated fully.
Transfer to a buttered or greased cake pan and bake at 350 degrees for 25 minutes. At 25 minutes, you may find the consistency is just a tad gooey – and that’s perfect. Remove from the oven and set aside to cool slightly for 20-25 minutes. This cake is best enjoyed warm, and we top with a big sprinkle of Within Without Granola and a drizzle of Vanilla Bean Chixi Butter. Enjoy!
