This take on Peanut Butter Chocolate Chip Cookies is such a nostalgic sweet treat for so many people. We’ve updated with health-forward ingredients and of course, Chixi Butter! Enjoy! 

Chixi Butter & Chocolate Chip Cookies

Yields: approx. 2 dozen cookies

What You’ll Need

  • 1 large very ripe banana
  • 3 tbsp coconut sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 eggs
  • 3/4 jar of Unsweetened Chixi Butter
  • Dark Chocolate Chips or Chunks (roughly 1/2 cup or desired amount…because we can’t get enough!)

Now you’re ready to bake!

  • Start by preheating your oven to 350 degrees and grabbing a cookie sheet (we like to grease it just slightly using Coconut Oil to ensure no cookies get left behind!)
  • In a mixing bowl, cream together the banana, coconut sugar, salt, baking powder, and 2 eggs using an immersion blender or standard hand mixer (roughly 3-5 minutes until light and airy)
  • Next, add in the Unsweetened Chixi Butter and continue mixing to form a dough
  • Finally, fold in the desired amount of Dark Chocolate Chips or Chunks until just incorporated
  • Roll into balls – approx. 1/2 inch to an inch in size – and press with a fork on the baking sheet
  • Bake in your 350 degree oven for roughly 10-12 minutes depending on desired crispiness
  • Let cool on the baking sheet for 15-20 minutes and then gently move to a wire cooling rack for another 30 minutes
